This roast is the easiest and most delicious thing I have ever tried. I do not eat red meat very often but can’t resist this recipe. I do not claim to be a very good cook and love anything this easy to fix. It is as follows:
-3 to 4 pound boneless beef chuck roast (buy it with minimal visible fat). I tried this with another type of roast but that didn’t work at all.
-1 (1 oz.) packet of dry Au Jus mix or brown gravy mix if you can’t find Au Jus. I haven’t tried the brown gravy mix so can’t really recommend that.
-1 (1 oz) pkt. of dry ranch dressing mix.
-5 whole peperoncini peppers (you might like more but I use 5) plus 1/2 cup of the brine from the jar of the peppers.
-1/4 cup of unsalted butter ( some recipes call for 1 stick of butter which is 1/2 cup but I use 1/4 cup).
Place roast in a slow cooker and form a small pocket on top of roast (don’t worry too much about this last step).
Sprinkle packets over the roast then add cubed butter on top in the small pocket, then add the peppers and 1/2 cup of the brine. Don’t worry too much about the order you add these ingredients to the roast as I haven’t found that it makes that much difference.
Cook (covered) on low for 8 hours or 5 to 6 hours on high. I haven’t tried the high setting so don’t know about that.
This easily serves 4 people. My husband and I get two meals out of this which means it is not that expensive.
